Greens are abundant during the winter time, so finding different ways to dress them up is fun! Make this a full meal by adding your favorite protein.

Makes 1 serving



  1. Peel the beets. Shred them using a food processor or cheese grater.
  2. Remove apple core and cut into thin slices.
  3. Start with a bed of arugula. Top with beets, apples, and almonds.
  4. In a small container, whisk together remaining ingredients. Pour over the salad.
