Greens are abundant during the winter time, so finding different ways to dress them up is fun! Make this a full meal by adding your favorite protein.

Ingredients:

1 Beet, medium (locally grown by Baker’s Fresh Produce, Front 9 Farm, and Martha’s Farm)

1 Apple of Choice (locally grown by Huffman’s Fruit Farm)

1 cup Arugula

1/4 cup Smoked Almonds, chopped (locally produced by Savory Snackage)

2 Tbsp. Olive Oil

1/4 tsp. Balsamic
-
1/2 tsp. Maple Syrup or Honey (locally produced by Baker’s Fresh Produce, Brighton Wool & Honey, Front 9 Farm, Schmidt Family Farms, and Tierra Verde Farms)
Method:
- Peel the beets. Shred them using a food processor or cheese grater.
- Remove apple core and cut into thin slices.
- Start with a bed of arugula. Top with beets, apples, and almonds.
- In a small container, whisk together remaining ingredients. Pour over the salad.
