1 Celeriac, grated
2 large Carrots, grated
2 Apples, diced
2 tbsp. Parsley, chopped
1 tsp. Honey
2 tbsp. Olive Oil
1/2 tsp. Apple Cider Vinegar
- Combine celeriac, carrot, apple, and parsley in a large bowl.
- In a separate bowl, whisk together remaining ingredients.
- Pour the dressing over the salad and toss to coat.
- Serve as is, or add a slice of lemon, walnuts, or feta cheese on top. Enjoy!
