Makes 4 servings

Ingredients:

  • 1 Celeriac, grated

  • 2 large Carrots, grated

  • 2 Apples, diced

  • 2 tbsp. Parsley, chopped

  • 1 tsp. Honey

  • 2 tbsp. Olive Oil

  • 1/2 tsp. Apple Cider Vinegar

Method:

  1. Combine celeriac, carrot, apple, and parsley in a large bowl.
  2. In a separate bowl, whisk together remaining ingredients.
  3. Pour the dressing over the salad and toss to coat.
  4. Serve as is, or add a slice of lemon, walnuts, or feta cheese on top. Enjoy!
