Summer gets a little sweeter with frozen treats. “Nice” cream is a trendy food for a dairy free and vegan alternative to ice cream.
1 Beet, cooked and cooled
1/4 cup Chocolate Bar, roughly chopped
2 Bananas, frozen
2 Tbsp. Milk (dairy free or regular)
- The night before you want to make this, peel 2 ripe bananas and freeze. Also, boil your beet until fork tender and refrigerate.
- Place frozen bananas and cooked beet in a blender, and blend until smooth. Add milk (can use dairy free) as needed to make the texture similar to soft serve ice cream.
- Do a taste test, and add honey if you would like to sweeten it even more.
- Stir in chocolate chunks and any other desired toppings. Enjoy!
