Ingredients:

1 cup Spelt Berries, cooked

4 small Radishes, thinly sliced

1 handful Microgreens

1 large handful Radish Tops

1/4 cup Parmesan Cheese

2 whole Ramps

1 Tbsp. Lemon Juice

2 Tbsp. Olive Oil
Method:
- Place radish tops, parmesan cheese, ramps, lemon juice, and olive oil into a food processor or blender. Blend until paste forms.
- Toss cooked spelt berries in radish top pesto until covered.
- Add sliced radishes and microgreens to spelt berries and mix.
- Add add salt and pepper if desired. Enjoy!
