A simple and nutrient packed side dish, using popular spring produce. Whether this dish is served hot or cold, your taste buds will smile!

  • 1 cup Spelt Berries, cooked

  • 4 small Radishes, thinly sliced

  • 1 handful Microgreens

  • 1 large handful Radish Tops

  • 1/4 cup Parmesan Cheese

  • 2 whole Ramps

  • 1 Tbsp. Lemon Juice

  • 2 Tbsp. Olive Oil


  1. Place radish tops, parmesan cheese, ramps, lemon juice, and olive oil into a food processor or blender. Blend until paste forms.
  2. Toss cooked spelt berries in radish top pesto until covered.
  3. Add sliced radishes and microgreens to spelt berries and mix.
  4. Add add salt and pepper if desired. Enjoy!
