Take your salad to the next level with this recipe! The flavors of the greens, chives, and spelt work together to elevate your salad!

4 servings

Ingredients:

  • 3 cups Kale, roughly chopped

  • 3 cups Red Leaf Lettuce, roughly chopped

  • 3 small Radishes, sliced

  • 1/4 cup Puffed Spelt

  • 3 Tbsp Chives

  • 3 Tbsp Lemon Juice

  • 2 tsp + 1/4 cup Olive Oil

  • Salt, to taste

  • Pepper, to taste

Method:

For the salad:

  1. Toss kale in 2 tsp of olive oil until coated. Salt, and refrigerate overnight. (This will soften the kale)
  2. Add veggies to salad and toss with dressing.
  3. Top with puffed spelt.
  4. Enjoy!

For the dressing:

  1. Whisk together lemon juice, 1/4 cup olive oil, salt, and pepper until combined.
  2. Mix in chives.
  3. Pour over salad.
