Take your salad to the next level with this recipe! The flavors of the greens, chives, and spelt work together to elevate your salad!

Ingredients:

3 cups Kale, roughly chopped

3 cups Red Leaf Lettuce, roughly chopped

3 small Radishes, sliced

1/4 cup Puffed Spelt

3 Tbsp Chives

3 Tbsp Lemon Juice

2 tsp + 1/4 cup Olive Oil

Salt, to taste

Pepper, to taste
Method:
For the salad:
- Toss kale in 2 tsp of olive oil until coated. Salt, and refrigerate overnight. (This will soften the kale)
- Add veggies to salad and toss with dressing.
- Top with puffed spelt.
- Enjoy!
For the dressing:
- Whisk together lemon juice, 1/4 cup olive oil, salt, and pepper until combined.
- Mix in chives.
- Pour over salad.
