Salads and rice bowls are both very popular healthy options at restaurants, so why not make your own at home?!

Makes 1 serving


  • 1 cup Arugula

  • 1/4 cup Quinoa, dry

  • 3 Tbsp Leeks, thinly sliced

  • 1/4 cup Carrot, shredded

  • 1/4 cup Summer Squash, diced

  • 1/4 of a Peach

  • 1 tsp Balsamic Vinegar

  • 2 Tbsp Olive Oil


  1. Cook quinoa according to package directions.
  2. In a bowl, place a bed of arugula. Top with cooked quinoa.
  3. Add all other veggies on top of quinoa.
  4. In a blender or food processor, combine peach, vinegar, and oil. Drizzle over the bowl.
  5. Toss and enjoy!

Note: For a little more protein, try adding a hard boiled egg!
