Salads and rice bowls are both very popular healthy options at restaurants, so why not make your own at home?!
Makes 1 serving
1 cup Arugula
1/4 cup Quinoa, dry
3 Tbsp Leeks, thinly sliced
1/4 cup Carrot, shredded
1/4 cup Summer Squash, diced
1/4 of a Peach
1 tsp Balsamic Vinegar
2 Tbsp Olive Oil
- Cook quinoa according to package directions.
- In a bowl, place a bed of arugula. Top with cooked quinoa.
- Add all other veggies on top of quinoa.
- In a blender or food processor, combine peach, vinegar, and oil. Drizzle over the bowl.
- Toss and enjoy!
Note: For a little more protein, try adding a hard boiled egg!
