Ingredients:

1 lb. Beef Stew Meat

4 large Carrots, peeled & diced

1 cup Ramps/Leeks, chopped

3 cups Russet Potatoes, chopped

3 cups Spinach

1 28 oz. can Crushed Tomatoes

2 1/2 cups Beef Broth

1 tbsp. Italian Seasoning

Salt & Pepper to taste

For serving: Multigrain Sourdough Loaf
Method:
- Add beef, carrots, ramps/leeks, potatoes, tomatoes, broth, Italian seasoning, salt, and pepper to slow cooker & add spinach on top
- Cook on Low for 6-8 hours
- Stir soup and add extra broth if desired
- Serve stew with a slice of multigrain sourdough bread
