Ingredients:

1 lb. Beef Stew Meat (from Simon Certified Organic Family Farm)

4 large Carrots, peeled & diced (from Martha’s Farm)

1 cup Ramps, chopped (from Baker’s Fresh Produce & Honey)

3 cups Russet Potatoes, chopped (from Baker’s Fresh Produce & Honey)

3 cups Spinach (from Baker’s Fresh Produce & Honey)

1 28 oz. can Crushed Tomatoes

2 1/2 cups Beef Broth
-
1 tbsp. Italian Seasoning

Salt & Pepper to taste

For serving: Multigrain Sourdough Loaf (from Ash Creek Farm and Bread)
Method:

Add beef, carrots, ramps, potatoes, tomatoes, broth, Italian seasoning, salt, and pepper to slow cooker. Add spinach on top.

Cook on Low for 6-8 hours.

Stir soup and add extra broth if desired.
