Slow cooker recipes are perfect for days when you know your evening will be busy. This stew will fill you up and leave you wanting more!

6 servings

Ingredients:

  • 1 lb. Beef Stew Meat 

  • 4 large Carrots, peeled & diced 

  • 1 cup Ramps/Leeks, chopped 

  • 3 cups Russet Potatoes, chopped 

  • 3 cups Spinach

  • 1 28 oz. can Crushed Tomatoes

  • 2 1/2 cups Beef Broth

  • 1 tbsp. Italian Seasoning

  • Salt & Pepper to taste

  • For serving: Multigrain Sourdough Loaf 

Method:

  1. Add beef, carrots, ramps/leeks, potatoes, tomatoes, broth, Italian seasoning, salt, and pepper to slow cooker & add spinach on top
  2. Cook on Low for 6-8 hours
  3. Stir soup and add extra broth if desired
  4. Serve stew with a slice of multigrain sourdough bread
