Best part about an egg scramble is that you can have it for breakfast, lunch, or dinner! This dish will give you a taste of spring in the best way with freshly harvested asparagus, radishes, and green onions.

Makes 4-6 servings

Ingredients:

  • 1 Tbsp. Olive Oil

  • 1/2 cup Green Onions*, cut into 1/4 inch pieces (available from local producers at Countryside Farmers’ Market

  • 1/2 cup Radishes*, thinly sliced (available from local producers at Countryside Farmers’ Market

  • 1/2 cup Asparagus*, cut into 1/4 inch pieces (available from local producers at Countryside Farmers’ Market

  • 6 Chicken Eggs* or Duck Eggs*

  • 1/2 cup Alpine Cheese*, shredded

  • 1/4 tsp. Red Pepper Flakes

  • Salt & Pepper to taste

  • 2 cups Spinach* or Arugula*

*available from local producers at Countryside Farmers’ Market

Method:

  1. In a mixing bowl, whisk together eggs, cheese, red pepper flakes, salt and pepper; set aside. 
  2. In a large skillet, heat oil over medium heat. Add green onions and sauté for about a minute. Add asparagus and radishes, and sauté until lightly browned; about 5 minutes. 
  3. Add egg mixture and spinach or arugula to the skillet and cook for about 5 minutes or until the eggs are cooked to your liking. Season to taste and enjoy!
