A sweet potato fritter is much like a potato pancake. It combines grated sweet potato with other vegetables and spices for flavor, plus egg and flour so they stick together!

  • 3 cups Sweet Potato*, grated

  • 3 Eggs*

  • 1/2 cup Cheddar Style Cheese, grated (optional)

  • 3 tbsp. Flour*

  • 3 Garlic Cloves*, minced

  • 1/2 cup Red Onion*, diced

  • 1 tsp. Red Pepper Flakes

  • Salt & Pepper to taste

  • 2 tbsp. Olive Oil

  1. Combine all ingredients in a mixing bowl.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add 1/4 cup scoops of mixture to heated skillet. Cook on each side about 2 minutes or until browned. Repeat until the mixture is gone. Serve warm and enjoy!
