Have you been experiencing tomato overload? Then this recipe is just for you! Simply blend and enjoy all on it’s own, or alongside a salad or sandwich!

Makes 2-4 servings


  • 2 medium Yellow Bell Peppers

  • 1 large Yellow Tomato

  • 1/3 of a Cucumber

  • 1 clove Garlic

  • 1 Tbsp. White or Sherry Vinegar

  • 2 tsp. Lemon Juice

  • 1 tsp. Salt

  • 2 Tbsp. Olive Oil


  1. Chop the pepper and tomato. Set a little bit aside for a garnish.
  2. Peel and chop the cucumber.
  3. Mix all ingredients in a blender or food processor until smooth.
  4. Place in fridge to chill if needed. Enjoy!
