Have you been experiencing tomato overload? Then this recipe is just for you! Simply blend and enjoy all on it’s own, or alongside a salad or sandwich!

Makes 2-4 servings
Ingredients:

2 medium Yellow Bell Peppers

1 large Yellow Tomato

1/3 of a Cucumber

1 clove Garlic
-
1 Tbsp. White or Sherry Vinegar

2 tsp. Lemon Juice

1 tsp. Salt

2 Tbsp. Olive Oil
Method:
- Chop the pepper and tomato. Set a little bit aside for a garnish.
- Peel and chop the cucumber.
- Mix all ingredients in a blender or food processor until smooth.
- Place in fridge to chill if needed. Enjoy!
